Im going to overclock the CPU and it's why is chose such a big PSU
What do you guys think?

Will it be able to play GTA V in 4k at decent framerate while streaming?

What's with the outrageous expensive monitors, pretty much $1,000 for 3 more inches, lol. I would get the 1300w PSU if you wanna OC further, I think it is only $10 more the last time I checked. Also, why do you have the extra wifi adapters if there's already one built on the motherboard?

you will be able to play GTA V in 4k while streaming (well not now, its not out yet).
this is wayyy overkill and will play any game at 4k (well AC unity is an exception).
you are picking monitors that are wayyy to expensive, when there are better options for less money. since you are getting 3 980s, you can buy this acer monitor (http://pcpartpicker.com/part/acer-monitor-umpb0ee005), which is still 4k, but it has G-Sync, which will greatly increase your gaming experience.
also, why are you wasting you money on a $400 wired network module?
since you are paying so much on a gaming setup anyway, you can get a better cooler then the h100i. something like the NZXT kraken x61 or the brand new corsair h110i GT, are both 280mm, RGB and better overall then the h100i.
also, you might as well get a bigger PSU, so you can add another 980 (if you want) later on.

Wow! What a PC.

If you can afford all of that, then go on. I would add (if i had the money) another 4TB HDD and do a RAID 1 for safety of all my precious data. 2 Samsung 840 Pro for RAID 0, i guess. Why not the 850 Pro? They are faster and more durable than the 840 thanks to the 3D nand at 40 nm.

3-way SLI... DAAAAMMMNNNN! More than enough for 4K.

Since you are doing triple monitor setup, and this is what my friend told me, he's a big triple monitor fan. He said with Nvidia to switch from one monitor to 3 monitors and doing some other stuff requires you to redo "everything" over and over, there is like no save profile kind of feature to keep your settings, so that sounds extremely annoying, that's why he switched to AMD for eyefinity, just so you know :)

LOL you save so much on the monitors, that with the money saved you can literally get a full custom water loop, for the same amount of money you originally wanted to spend.

I haven't heard about that one
Should I consider r9 290x?

With the current Omega Drivers, both the R9 290X and R9 290 perform better than the GTX 980 and GTX 970, respectively, at 4K. And yes, AMD eyefinity is know for being much much easier to setup than nVidia Surround. Also a Sapphire model of the R9 290X comes with 8GB of VRAM for extreme gaming scenarios.

Relative to the storage, i still would preferred the 2 small SSD RAID 0 + 2 big HDD RAID 1 than the 1 big SSD.

the 980 is much faster (and power efficient, and quiet, and cool) then the 290x, so even if you replace the 980s will 290x, you will get lower performance.

Well, before we begin any of this, the main problem is that is it even possible for you to run triple 4k monitors. One is already having a hard time, and if you are streaming, that'll probably even lower the fps a bit more, so you may be streaming a pretty laggy/choppy video with current GPUs. How long until you buy these? If you can wait for a few months (Or perhaps sooner than we thought), I would get the new 390x that's coming out, then it may be possible for what you want to do.
