Now, I am aware I can overclock this, but i have a couple of questions.

Q1: Is the ASUS software any good for overclocking? or better to do it manually?
Q2: Whats a realistic overclock I can get with these parts?

I just want a little advice first. I will of course be installing all my software etc before I even consider doing it :)

Q1 - Yes. It's easier to use the software.

Im still undecided on my storage options lol, happy with the M.2 as a boot & software, although may up it to the 256 & drop the NAS drive until a later date as i do have a 2tb external, which i probably could take apart and put internal. It will be my 1st ever build and i just want to make sure i understand potential issues before I even begin :) seen way to many people have issues, which even i know the answer to which tells me they havent researched anything
