Installed HDD to move files from SSD, moved a bunch of stuff, and now I screwed up everything

Hey Tom's Hardware community! I followed a YouTube tutorial on having a HDD be where I install everything and my SSD be where Windows is at. The video showed me how to go into the Reg Edit and find the right files for the drive to work how I want to. After that, I moved the "My Documents" folder location from my SSD over to the HDD like this tutorial said. When I brought up one of my games, it wouldn't read my previous game saves and it refuses to save new ones. That's because the game saves were in "My Documents." I re-installed the games and no results. All of my games were installed through Steam, so I uninstalled the games and Steam and now I can't install Steam. I don't know why it is doing this. In my HDD (which is drive E, by the way) everything is in blue (file wise). Can I reverse the changes I did, or do I need to remove everything and reinstall Windows?

System restore failed big time. What else should I do?

EDIT 2: I booted the PC into safe mode and tried the system restore through there. Same result... total failure.

Thanks for the tutorial, Boogieman, but in my case, it didn't help. I had to completely reinstall the OS. I'm thankful you put time and effort to help me, so I gave your response as the answer. Thanks for your time, and sorry I kind of wasted it.
