My $800 Gaming, Streaming, Video Editing, Recording Builds: WHICH IS BEST?

Hi guys, I'm completely new to building computers and as most people I'm getting my income tax in soon. Naturally, I'd like to make a nice budget PC that will do all of the above (gaming at 1080p at great frame rates, video editing, streaming, and recording for youtube). Now my budget is set at $800 but I'd like to keep it closer to $700 if possible.

My questions are the following: 1) Will the CPU be sufficient for all of the things listed above, and if not: What are your suggestions? 2) Is my PSU too big for this PC if I intend to overclock a bit? and 3) How hard will it be to have the R9 290 work for me? I've seen a lot of horror stories.

In the first build that TX3 will cry like a baby when you start overclocking the FX
In both builds the power supply could be better (the best EVGA's are the G2 and B2)
For streaming the FX build is better, assuming you aren't using shadowplay or raptr
Overall I prefer the i5 build though
