What is the advantage of having more GPU memory?

Hello,
First of all, more VRAM will only result in fps gains if you had previously a very low frame buffer(less that 1 GB) as this forces the system to read data to generate the frame from you hard drive or SSD and they both are considerably slower than the on board memory on GPU in most cases.
Secondly, the only situations you will see improvements (not necessarily more fps) is if you are running loads of texture mods that are highly detailed or a very high definiton display like a 1440p or 4K monitor.
But beware: some aftermarket brands like ASUS, Gigabyte(I'm not pointing at them) for example often double the graphics memory on the low to mid range cards to attract more customers. On a card like a Radeon HD 7770, which I have owned...

On a card like a Radeon HD 7770, which I have owned, making the frame buffer 2 GB doesn't improve the performance at all as the GPU core itself is slow enough to barely use the 1 GB of VRAM it come with from AMD (reference design).
