Sound Issues Using Optical/SPDIF on Sound Blaster Z

I am having some serious sound issues with my system and it is starting to drive me insane. I am running my 5.1 surround system through SPDIF/Optical on my Sound Blaster Z and it has always been fairly buggy. Until recently though it was somewhat stable and worked rather well considering the price of the unit home theater unit. Now the problems keep increasing so here is the list of what is going on.

-Sound keeps randomly dropping and then starting back up
-Pops, cracks, and snaps regularly during gaming when v-sync is enabled if it produces audio at all
-Windows will not play audio through the SPDIF interface and it even goes as far as not allowing some applications (mostly i-tunes) to play music when digital output is selected in windows
-When I have regular analogue surround speakers enabled through windows, it will play through both digital and analogue speaker sets if digital speakers are hooked up
-Whenever I use the audio encoders to simulate 5.1 surround with stereo sounds (music and some games) it will cause i-tunes to not play back unless analogue speakers are enabled as output device

So I have tried so much shit from changing drivers, cables, leaving one speaker set plugged in at a time, reinstalling and uninstalling drivers and sound blaster pro studio, I don't even know what to try anymore.

-2x Sapphire Tri-X OC R9 290x in crossfire
-16gb (2x8gb) DDR3 2400mhz RAM G.Skill
-Corsair H100i (unit is plugged in for power only as Corsair link fails to work with this motherboard)
-Samsung 850EVO 250gb SSD
-2x 2tb 7200RPM Seagate HDD's
-2x 1tb 7200RPM Western Digital HDD's
-Rosewill Lightning 1000w PSU
-Cooler Master HAF 932 Advanced
-This SATA Expansion Card which I only use for my CD/DVD and BlueRay drive
-ASUS CD/DVD Drive
-ASUS BlueRay Drive
-Powered dual hot swap bay with 2.5" and 3.5" drive slots

Software:
-Windows 7 Pro
-Sound Blaster Pro Studio
-I-tunes
-Games/Steam/Origin Client
-Firefox for steaming video and audio

Speakers:
-Logitech X-540 (Analogue)
-Samsung HT-E550 (Digital)

This is everything I could possibly think of.
