Building my 1st Gaming PC around Elite:Dangerous - would love some advice

I love playing Elite Dangerous and am excited about Star Citizen, No Man's Sky etc. The trouble is I can only run it at 1366x768 at an average of 15 FPS, so I want to spend some money on a new PC that will do it justice... i.e. 1920x1080 at 60FPS. But I want the PC to be something that will last as my gaming interests increase. Someting I can overclock, upgrade, also add two more 1080 screens either side for the "cockpit" feel.

So I've done my research on Tom's Hardware (great site!) and I think I'm ready but want to get a second opinion as it's a fair chunk of money (£700). One thing that is bewildering me is what type of CPU Cooler I should get when I decide to overclock.

I would avoid the 285, it performs like the cheaper R9 280 or worse and it's more expensive. The Spec 01 is rather limited in expansion and can't even fit coolers like the 212 EVO. What I would do is drop the SSD and get cheaper ram. With the money saved upgrade the GPU and PSU.
