Two different chipset builds. Can anyone help me decide?

So, I am at the peak of making my next purchase for a new PC build (within the next week). Ideally, I'm making a PC build that is designed for gaming AND video editing in mind! This is an addition to another post I made earlier to try and be as specific as possible as to what my usage would be for. :) I would like to be able to run most games on Ultra (High is completely acceptable as well) @ 1080p. I would also be editing on average 1 or 2, 5 - 10 min videos @ 1080p 30/60fps per week using SV13. Along with Photoshop and the occasional use of other software such as After effects and premiere pro.

Here is an attempt at my X99 build. I may have gone overboard on the RAM?...

CPU: i7 5820k (£320.46)
MoBo: MSI X99S Gaming 7 (£212.47)
GPU: MSI GTX 970 Gaming 4G (279.99)
PSU: Corsair TX 650 (From previous build)
RAM: G.Skill Ripjaw 4 @ 3000 MHz (£234.68)
HDD: 2 x 2TB HDD (From previous build)
Cooler: Corsair H110i GT (£105.93)
Case: Phanteks Enthoo Luxe (£112.99)

---------------------------------------------
TOTAL: £1266.52
---------------------------------------------

It would also be nice to know what kind of overclocks I could expect to achieve from this build? Do you think I would be able to push for 4.4 on the CPU? I wouldn't be too bothered with the RAM.

Here is my Z97 build:

CPU: i7 4790k (£268.98)
MoBo: MSI Z97 gaming 7 (£129.98)
GPU: MSI GTX 970 Gaming 4G ---- @ 1440hz (279.99)
PSU: Corsair TX 650 (previous build)
RAM: G.Skill Ripjaw @ 1600 MHz (previous build)
HDD: 2 x 2TB HDD (previous build)
Cooler: Corsair H110i GT (£105.93)
Case: Phanteks Enthoo Luxe (£112.99)

---------------------------------------------
TOTAL: £897.87
---------------------------------------------

Again, It would be nice to know what kind of overclocks I could expect to achieve from this build. I apologize to other people that have seen my posts before. I'm just very finicky when it comes to making sure my money is spent in the right places when it comes to hardware. :) I really do appreciate the advice you guys can give me. :) Thanks!

Not sure if I missed anything else.. If I did, let me know :)

Is there any difference in clock speed performance? As I noticed the 4790k can clock a bit higher than the 5820k can this affect the performance on games and response or would this not matter too much? Thanks :)
