i will also say the GTX 780 as blender by default does not use SLI for anything so unless it is seeing them as 1 logical unit it will only use one or the other not both ... you can program it in to do so though i am unsure how the SLI profile will go
the more updated CUDA API set on the 700 series will help with cycles rendering and lighting effects too
as said above the more graphics RAM will help ... but depending on how big or small your scenes are might not be an issue or be a major issue

32GB of RAM sounds good but really when i have gone to actually use it it isn't enough when using blender as i either use alot less or a ton more than just 32GB of RAM so 24GB of RAM should be enough if 32GB of RAM is not affordable with the...

i suggest also getting a bigger SSD for current projects and adding it to your current set up so you can read and write to it quicker than just to the 120GB SSD. a 256GB or bigger one should be big enough to store your current projects and the supporting files to go with them for textures and sounds.
if possible spend like $70 on a 1TB HDD also as projects do get big and quickly so if this is for work or for a serious hobby to which you want to archive stuff the 1TB HDD will come in handy

@iamacow as i said the OP could probably program it into Blender but that is assuming the OP 1 cared enough to do so 2 knew C++ and python and 3 knows how to code CUDA programming across multiple GPUs.
At the moment this is not done but i believe it is possible if done correctly just i do not think it will come to Blender any time soon as CUDA on a single more powerful GPU is better than the theoretical benefits of having it spread over 2,3 or more GPUs for the kind of rendering that Blender does anyways. IF there is a project for it going on i will support it but if not that i am not willing to start my own as i just have 1 GPU anyways.

Not sure, I haven't used Blender in a while, I don't do much 3d work anymore. I use it mostly for the 10-bit color monitor support when working on photos. It's basically a GTX 280 and that is an old card now.

a useful link for that will be http://blenderartists.org/forum/showthread.php?239480-2-7x-Cycles-benchmark-%28Updated-BMW%29 as 8 posts below the benchmark scene for cycles is the quadro fx 4800 though on a dated system it should give you a peek at what kind of preformance the FX 4800 will give in that kind of scene
