Generally I prefer to use a single, more powerful GPU. It means I can spend a bit less on the motherboard, and I can also avoid some of the problems associated with SLI or Crossfire. So unless you can save a considerable amount by going with two GPUs, I'd go for a single one.
What were you thinking of getting?

Depends on how much money I can get. Either 2 970s or a 980. If I can somehow source alot more money a titan X.

What resolution are you wanting to game at? The 970's are more powerful but only have 3.5gb of usable vram. The 980 can use 4gb vram to its full potential but is less poweful

What resolution will you be using? If it's 1080p I'd just get a single 970 and have the option of upgrading to SLI 970s later, if it's above 1080p I'd go for SLI 970s.
The 970s will be quite a lot faster than a single 980, and for not that much more. I'd say it's worth dealing with the SLI issues in that case.

(By resolution we mean your monitor resolution, not game settings. Also, the 3.5GB issue has kinda been blown out of proportion, so don't worry about that)

Your resolution is dictated by your monitor
