I'd go with the Vengeance or the Sniper; they should run just fine at the stock DDR3 voltage of 1.5. 1.6 and 1.65 are o.k. and shouldn't cause any problems, though you might have to manually adjust the voltage in the BIOS.
Heat is not a problem for memory; I have attempted several times (each) to get Corsair Tech Support et al and Crucial to tell me how hot is too hot, and both have said "don't worry, the memory can get really hot." One told me it can get hotter then the motherboard can tolerate, that the mobo would shut down first.

I have the Vengeance Pro 1866MHz 2x8GB memory kit and it is great. Was easy to set up too. 1.5V at 1866MHz CAS9. It will default to 1600MHz when first installed. In BIOS enable XMP, Profile1 and it will auto set everything at advertised speed and timings. Just like it is supposed to do. A simple & easy OC to 1866MHz.
