Trasnfering some files on an old HDD to a new SSD with different software on it already?

Hi, recently I bought a new laptop with an SSD installed on it with Windows 7 Pro already. Now, I would like to transfer some of the old files from my old HDD into the new one (mainly so I don't have to completely start fresh).
The thing is that the new SSD is smaller, 120gb (about 80gb available right now) while my old HDD has about 320gb (180gb used), so I want to choose what files I can transfer and so on. The thing is, I'm very unsure about this situation and I'm not sure how I can word it exactly to my tastes to find similar situations, so I decided to ask as best as I can, if this is even possible.

My old HDD had Windows 7 pro and so does the new one. What I mostly want to transfer is data two users on my old HDD, and some of their programs/saved data. How would I go about doing that so it can safely be on the new SSD without really hurting any of it's normal data?
