Between this two I would go with the r9 280

You can also lower prices by getting only 4gb ram now, and later buy more ram, or buy and i3-4160.

From all this options, the worst ones would be to buy and i3-4160 or to buy an r9 270x

So, if you want to get the build even cheaper I would recommend changing GPU to R9 280 (slightly decrease in performance, but high increase on power consumption, which would cost more money in the long run on the electricity bill) and/or getting only 4gb ram for now.

You can lower the price of your build by going to an i3 4370. It will run Minecraft faster than an i5, because Minecraft is based more on single thread performance.
In fact, you can go even lower by dropping down to GTX 760. Minecraft doesn't really use your GPU that much. I can run Minecraft using a Pentium 2020M's measly HD 4000 graphics with a texture pack at high settings at 60 fps.

Any of the following build will be more then what you need to get 60 fps playing minecraft. The Intel build is better because it will give you more room to future upgrades, and have better performance in most games (but with the suggested GPU the inlet stronger performance will not be noticeable.

you cannot notice frames higher then 60 unless you have a monitor with a refresh rate higher then 60hz, so if an A10-5800K can get 95 fps an i3 will get at least the same. Unless you have a 144hz monitor you dont need to worry about frame rates.

For other modern games and if your budget allows you, you can go with i5. But with a mid range GPU you will not notice any real difference between i3 and i5
