I am looking for a PC that can run games like: Arma 3, Minecraft(modded), Project Cars, ETS 2, Cities Skylines, Skyrim, Black Ops 3, Battlefield Hardline, and Sims 4 at 1080p 60fps on high to max settings. I would like to be able to have 3 monitors so I can play simulators and do some video editing. I don't really car what the case looks like and please include Windows 8.1.

3 MONITORS?!!!!!!!!!
You need some more than $1000, but 1 monitor will probably max out all the listed games, and at 60 FPS.

Extra threads of the xeon will hep in multi tasking.
Good deal on the mobo.
Awesome RAM.

A beefy psu which will let you add another gpu later down the road.
