For 4k gaming, does the 4gb/3.5gb vram bottleneck 980sli/970sli? That is, is it really worth waiting for the higher vram versions of those cards for sli 4k?

Solution
It is worth it to wait if you want to eliminate random fps drops and stutters, because at those moments the game is demanding for more VRAM and your GPU doesn't have them and so fps drops for a few sec and stutters a bit. If you want to play at 4k ultra on the newest games and some current games too, you would definitely want a GPU with a minimum of 6GB VRAM, so far GTA V reached up to 6.8GB for me, but that was just one moment, it is usually using around an average of 5GB of VRAM. So it doesn't really matter if you get like 100 fps, if you don't have something else the game needs, like VRAM, it drops to 15-30 fps sometimes and ruins the gaming experience.

Yes, it probably is for 4K gaming and you shouldn't have to wait long as they're expected at the end of Q1 2015, which should mean fairly soon. However, being beneficial isn't the same as being essential. Either of those cards in 4GB SLI configurations does "ok" with single monitor 4k gaming. Personally, I'd either wait, or go with a pair of 290x 8GB cards.

Q1 has already passed, I cant do the AMD in cf with my current psu.

Actually, it hasn't, there is still a day left. Heh. But we know nobody ever releases things on time, so I'd really expect either a release or an announcement of a releast date sometime in May.

On a side note, and I just mention this because it always makes me wonder, it seems that if you could afford to buy two GTX 980's at around 1000 dollars, you'd be able to afford a 100 dollar PSU for two 290x's which are only 800-ish. For higher resolutions the AMD cards are better performers in any case. Just a thought, but I also understand cutting budgets too close as well.
