This is the gaming Rig I plan to build this year is it good enough for high end ultra gaming 60+ fps

(I live in the UK)

Case: Phanteks PH-ES614L_BK - Enthoo Luxe Full Tower Case - Black
Mobo: MSI Z97 Gaming 7 Intel LGA1150 Z97 ATX Motherboard
CPU: Intel Core i5-4690K
CPU Cooling: Phanteks PH-TC14PE CPU Cooler - Red
GPU: MSI NVIDIA GTX 970 Gaming Twin Frozr HDMI DVI-I DP Graphics Card 4GB
Thermal Compound: Arctic Cooling MX-4 4g
PSU: EVGA SuperNOVA 750W PC Power Supply - Gold (G2)
SSD: Samsung 2.5-Inch 250 GB 850 EVO Solid State Drive
HDD: WD 1TB 3.5 inch Internal Hard Drive - Caviar Blue
RAM: HyperX FURY Series 8GB (2x 4GB) DDR3 1866MHz CL10 DIMM Memory Module Kit - Red

What sort of performance will this achieve on different resolutions and potentially more then one monitor?

I will in future get another of the same GPU and 2-way SLI connect them (but give a scenario for both because for the time being I will have only one)

And I am considering using the 'Acer Predator XB270HAbprz 27" LED Gaming Monitor' however I will be using a normal 1920x1080p for the time being. Any suggestions for a better monitor would be great too! (I may have multiple monitors)

At max settings 1440p+ that 3.5GB of full speed VRAM will limit you; but as long as you are within the VRAM limits you'll be ok; I can get by at ultra settings at 1440p+ with my 780Ti if I just dial down the AA. For 1080p only a few titles that might breach 3GB/3.5GB, so g2g with a 970. I use this 27 inch 144hz 1080p monitor: http://www.amazon.com/VG278HE-27-Inch-Screen-LED-lit-Monitor/dp/B00906HM6K/ref=sr_1_1?ie=UTF8&qid=1430496156&sr=8-1&keywords=asus+27+inc+144hz+1080p; it's pretty good, nice colors, can use it for Nvidia 3D Vision and surround with 3 etc.

970 single card will get you good frames at 1080; 970SLI will let you crush it at 1080p.

How much different would that make to a normal 1080p monitor? Is it substantial?

I have an asus 27 inch 2560x1440p monitor in addition to the 27 inch 1080p monitor, running 3840x2160 DSR on my 1080p monitor looks better than the 1440p monitor. Plus I still have the option to fall back to 1080p if I have something absolutely too demanding.

So you would you recommend 1080p rather than 1440p, as long as you use DSR and also aren't there issues with AA and DSR? plus menu's in games think you're running on a bigger monitor and are barely readable?

Menu sizes/text in general are going to be smaller the higher in resolution you go: http://www.makeuseof.com/tag/getting-4k-monitor-browser-use/.
Also it depends on the game, Payday 2 at 4K not as big a deal as Rome 2 which is hugely dependent on UI interaction.
What issues with AA and DSR do you mean? I have none, I can use all types of AA with DSR.

sorry i should have been clearer--i meant on a 27 inch i would go for 1440p for overall use not just gaming--i know its a gaming pc but most people use it for everything else as well as gaming

to me 1080p on the desktop and web browsing in programs etc didnt look sharp enough

Sorry, not issues I should rephrase that :p I meant like the AA makes it look like blurry and having AA disabled makes it look more clear?

Weird, that sounds like the reverse of what AA should do. On what game or games is this happening?
