Calculate the worst case scenario for power usage, your rig at maximum power draw, then add 10% and get at least that wattage. For example, if your rig uses 500W at full power, get at least a 550W PSU or 600W if you plan on adding some over clocking headroom.

IMHO, fully modular PSUs are worth the extra few bucks as it helps with cable management, air flow, stress, and most importantly looks.
