Western Digital drives problems recording 1080p 60fps losslessly?

So I've got 2 Western Digital Blacks 3tbs in raid 0 for gameplay recording. I use UT Video codec in Dxtory, and the game is The Witcher 1. When empty, the drives' speed are, according to Dxtory, somewhere around 240mb/s, although they dropped to 180-ish when half-full.
Dxtory tells you what your own fps is, and what the file fps is, and sometimes my file fps alone will drop to 40-ish random, only to go up again a few second later. (This happens even if I ask Dxtory to sync my own and the file fps.)

My question is, are my drives fast enough to do 1080p 60fps recording losslessly, and are they responsible for the fps drop?

The game was on my recently-broke secondary hard drive. However, as I was getting near-constant 60 fps for my own screen, with just the file itself dipping, I don't think that was the issue. Please note, this problem also happens with codecs like VFW x264.

I don't think anything else on my PC can be at fault. It's mostly a new PC.
Mobo: Rampage V Extreme
CPU: i7-5960x (Cooler is Corsair H100i)
GPU: AMD R9 295x2 (Crossfire disabled because The Witcher is an older game, though.)
RAM: G.Skill DDR4 32GB 2400mhz
SSD: Samsung 850 EVO 1tb
Game (now) located on: My SSD (Might put it back on my new harddrive)
Recording to: 2x WD 3TB Black in raid 0.

Only other thing is that, according to HD Tune, one of my HDDs are not terribly fast on its own. 110-80 mbs on write, as compared to the other, much faster one.

If worst comes to worst, I might buy 4 WD 1tb blues, as I read that they are much better for sequential writes. It would kinda suck, since I only have so many SATA ports on my mobo, and I already have 4 in use.
