Gaming PC Storage/ Memory Dilemma?

Hey Guys, So I recently decided to take the step into the world of SSD (I know I'm a little late to the party, but whatever haha). I am also contemplating whether or not to use a RAID setup, something which I have never done before.

This is my system now:

Case: NZXT H440 - White
Motherboard: ASUS Z97-C
CPU: i5-4690k OC'd to 4.5GHz
RAM: 2x4GB 1600MHz DDR3 Kingston HyperX Black
GPU: ASUS STRIX GTX 960 (However my MSI GTX 970 should be arriving tomorrow)
CPU Cooling: Corsair H100i w/ stock fans
Storage: 1x Seagate Barracuda 1TB 7200RPM drive
1x WD Caviar Blue 500GB 7200RPM drive


Basically what I wanted to do was add in 2x 250GB 850 EVO's and put them in RAID 0, with the 500GB drive as extra storage and the 1TB drive to do regular backups of both the EVO's and the 500GB drive. As I said I am a scrub when it comes to RAID so I am not even sure if this is possible? or if this is the best way to do things?

Also, I was thinking about switching out my RAM for a matched set of 4x4GB 1600MHz HyperX Fury. Would this yield any noticeable improvements for gaming? or is it just a huge waste of my money?
