As you can tell I am clueless, also don't really understand "tech" talk so please try to be easy on explaining things thanks!!

Solution
1) Yes, it'll work fine. Just unplug the old one, pull it out, and put the new one back in. You can search YouTube videos on how to do this.
2) You put the wrong link
3) You shouldn't have to put it in an external drive enclosure, if you open up the side there should be slots for hard drives. You just need to plug in a SATA power and data cable
4) Yes, after upgrading it you will still be able to use an external storage drive to back things up to

Yer I do agree, as for the three monitor set up, as long as one of the monitors has HDMI or DP you'll be fine, the card has 2xDVI (which nearly all monitors have) 1xHDMI and 1x DP. HDMI is found on a lot of monitors though not all, DP is only found on very high end monitors generally speaking.
So if the monitors can take HDMI, 2 will be plugged in via DVI and one via HDMI.
