Gaming/Editing Build ~ AUD $2000-2500

Hi, I am about to build my first PC and would appreciate any advice, especially regarding any compatibility issues I might have missed.
The main uses will be gaming and video editing with Adobe CC.
I don't see myself editing in 4K in the near future, so I haven't designed the build with that in mind. I do still require a fair bit of processing power for my HD projects.
The game I'm currently playing the most is Skyrim (heavily modded) but I'd like to allow for more graphics intensive games as well.
I was originally trying to keep the cost under AUD $2000, but I'd be willing to spend up to AUD $2500 if the better components would make a significant difference.

I have put together 2 options on PartPicker at each of these values. Which build do you think would suit my needs better? I am located in Australia.

- I do plan to overclock

Thank you both for the advice on the CPU cooler.
Are you able to expand on your reasons for suggesting air cooling over liquid cooling?
I don't have any prior experience with CPU cooling so I was just basing my choice on things I'd read about overclocked builds. Is the H55 just poor quality? I would be happy to spend extra on a different liquid cooler if it's worthwhile.
Anyway, I'll look into the Noctua and CRYORIG models suggested above.
