I'm running GTA V with v-sync on on High settings with my GTX 970, I was experiencing some lag so I used MSI afterburner to monitor a few things, and I found that the vram usage on my 970 would be over 3.45gb when I experienced the lag. I'm not sure why It's using that much vram, in the settings, it says I've used 2.3gb.
