As far as keyboards go, it looks like you're willing to spend the $$$ on a mechanical keyboard. Good choice.
Now, Corsair keyboards are not the best. If you want a solid mech keyboard that will last you years, you should get a top quality one. At the same price point of the Corsair K70 and the same full-size style, I would recommend either a Ducky Shine 4 or a Das Keyboard 4 Professional. The Ducky has the best keyboard lighting you're gonna find and uses Cherry MX switches. It's also got excellent build quality. Now, the Das Keyboard does not have backlighting, but it comes with those handy media buttons and a volume wheel that you would get on the Corsair K70. It does not use Cherry MX switches, but it still uses good ones and the board is assembled of top quality parts as well. Another thing to note is with the Ducky and the Das Keyboards, you'll be able to replace the keycaps to a custom set. The Corsair K70 has that option, but because its bottom row of keys is not the standard, custom keycaps will look wonky.
All that said, the Corsair K70 is still a good keyboard and does use Cherry MX switches which are the best, so it is still a good option, I just can't speak of its build quality. I just figured you would like to know of some other higher quality options.

As for gaming mice, I use a Razer Taipan, and after I got used to the feel of an ambidextrous mouse, I loved it. I play CSGO and it has not failed me yet! It's optical and has a max dpi of 8200. It does light up green, which I find annoying since it does not match my theme. But I got it for $40 so I can't complain
Don't actually have any recommendations on the mice. I know the Razer mice are good, but I'm not sure if there are any "top quality" mouse brands out there haha.
But if you spend $160 on a keyboard, that leaves you with $90 for a mouse, and I know there are good mice out there for $60-70. I just suggest you buy a trusted brand and one that has good reviews and one that you like how it looks. I've heard good stuff on the Corsair Gaming M65. The RGB version is definitely the one to buy, and it's only $60 on amazon right now:
