I highly doubt that running two SSDs in RAID will significantly improve either of the things you intend to use your computer for, if you were editing 4K video or doing other storage intensive tasks, then it would make some sense, but as it is you're doubling the risk of losing your data for no real gain.
As far as your build goes, I would suggest something like this instead:

Here is my reasoning:
Rampage V extreme -> X99S SLI plus: there is no way you need a rampage board for this build, it's way overpriced for features you'll never use. Any X99 motherboard is good enough for an enthusiast system, and the X99S SLI plus offers features of much more expensive boards.
Liquid cooler -> Noctua D15: the D15 performs as well as most AIO units even when overclocking except it'll never spring a leak, unless you really want the aesthetics of a liquid cooler, I'd recommend a good air cooler instead every time.
RAM -> cheaper RAM: saved you $70 by removing the heat spreader, but it's your choice really. RAM speed has zero effect on real-world performance, especially DDR4. RAM simply hasn't been a performance bottleneck for many years now.
WD black -> HGST 7K4000: for a few extra dollars you get an enterprise-grade drive with 2 million hours MTBF.
970 SLI -> single 980: This is just my preference, but a single fast GPU will always be better than two slower ones - SLI doesn't work in every game, introduces stuttering and doesn't work for hardware acceleration in professional apps.
All in all I saved you $500 for essentially the same PC.
