Fan set up for my case need some help.

I wouldn't put one on the side, at least initially.
Having an intake fan at the front and an exhaust at the rear generally creates a good flow of air.
The side fan just tends to push the heat around inside the case, only try this if you are really having problems with graphics card temperatures.

Im going to be putting a xfx r9 280 double dissipation card in the case. So would it be ok for me to put 1x 120mm fan in the front then put a 1x 120mm fan on the side both as intake?

People say this, and I've yet to come across a case where a side fan doesn't help GPU temps. I always try fans, no fans, different directions on all my cases to see what the optimal setup is. I get the theory that it disrupts things, but in practice getting cooler outside air to the GPU has always helped in my experience.
