Well if it tells you that you need a 750watt psu and you have a 600watt psu, you should probably consider getting a 750watt psu.

a system with an overclocked six-core i7-3960 and the Sapphire dual-x 280X 3GB draws 417w so i really don't understand why they ask for a 750W PSU unless they mean that for a crossfire setup.

600W will be more than enough if it really delivers 600W on the 12V rail.

That doesn't really matter if the GPU is having issues. What really matters is the amperage being put on the 12V rail. If you have something like only 30 amps, you will have problems with a graphics card while most other components wouldn't run into issues. Just to be safe though, I would get a 750 watt psu that has a high amperage on the rail such as 40 - 50 amps.
