600W will be more than enough if it really delivers 600W on the 12V rail.

That doesn't really matter if the GPU is having issues. What really matters is the amperage being put on the 12V rail. If you have something like only 30 amps, you will have problems with a graphics card while most other components wouldn't run into issues. Just to be safe though, I would get a 750 watt psu that has a high amperage on the rail such as 40 - 50 amps.
