8 GB is more than enough for any game on the market right now. You won't get a FPS increase; most don't use more than 4 GB.

Now if you run things in the background, do video editing, or alt-tab frequently to things like Chrome left open, 16 GB will make a difference. Otherwise, I wouldn't waste your money.

If you tend to leave a couple of things open in the background while gaming, you may notice that it takes less time to tab in/out of games and through your open applications since they can remain in RAM instead of getting paged out to the swap file to free more RAM for the foreground application. Re-loading the game, levels or areas may also be faster and smoother due to most of the data staying in the OS disk cache.

Adding sticks is not guaranteed to work. Only replacing the 8gb with a new 16gb is guaranteed to work.
