Dot-Matrix Printer Will Not Print

My office has two older Epson DFX-8000 printer of which we only use one. Up until recently it was connected to a computer running Windows Server 2003 and was used to print reports and such which are cheaper to print with a dot-matrix printer.

Unfortunately we've since decommissioned the machine it was working with and replaced it with a Windows Server 2012 box. We have not been able to get it working since. It would not work with Windows Server 2012. We tried Windows 7 and XP with no success. Switching to the unused printer did not make a difference. We've attached them to multiple different computers as well. I once got it to work on Debian 7 using CUPS and a generic epson driver (epsonnc I think, but can't quite remember). The thing printed out a test page and a few documents from LibreOffice. Then I changed a setting and it stopped working. Most of the time the machine does nothing when we try to print. Sometimes it will spit out a few lines of jibberish when we try to print a test page and only stop when the paper is out. We've even looked at the dip switches, but can't come up with a solution.

Does anybody have any ideas? The printer does not have to be attached to any particular computer, just available for use some how. We don't have the money to buy a new printer right now. We are on the verge of giving up and simply using the copy machines for these printing tasks even though it would be more expensive.

You have left out vital information

What interface is used to send data to the printer
Parallel, serial, USB Ethernet
Serial (rs232) cables are notorious in not being standardised
Parallel ports have various options set in the bios which can affect what happens

What about re commissioning the original server and using it only as a print server

The interface is most likely parallel. It is one of those F2A032-10 cables. Unfortunately it is not possible to recommission the old server per se. It had been purchased from a vendor to run our Library Management System. We have since moved to a hosted solution for the program so I wiped the hard drives of the machine and re-provisioned it as a FOG server. It is from there that I actually once got the printer working.

As it turns out the linux box is a 32-bit machine. Being that the hardware is nearly 8 years old I am not sure if it supports 64-bit computing. We have mostly 64-bit computers otherwise except for a few downstairs attached to legacy receipt printers which we will be getting rid of in the future. If we can find a copy of Windows Server 2003 we may be in luck. The University I work for has a volume license agreement with Microsoft, but the central IT office did not even have Vista so my hopes are not high.

We have XP, but can't seem to install the printer and get it working. We might not have the right drivers. Epson's site did not list any xp drivers only Windows 98 and Vista. Also, and this may be unrelated, but once the printer starts spitting out jibberish it will continue unless switched off and the power cable is unplugged.
