Question as shown in title:
Can my GTX 960 Gigabyte G1 4Gb GPU run 2560x1440 (1440p) for gaming such as Minecraft, planetside 2 and GTA in the future

Minecraft would be fine, not so sure about planetside 2 or gta v. That card is meant for 1080p even with the 4gb of memory, the 960 only has a 128bit bus so 1440p in a demanding game like gta v is a tall order, it would probably run but expect less than ideal frame rates.

get the r9 280x, its a better card at that resolution.

The r9 280x only has a max of 3Gb of GDDR5 VRAM compared to the 4Gb in the GTX 960 and what makes it 'better at that resolution'??

The larger memory bus for that 3gb to travel through and the 280x has a bit more gpu power. I doubt a 280x would be all that better than the 960 4gb at 1440p though maybe a couple of frames depending on the game.
