If I have one gtx 970 and then decide to throw a second one in sli, will I be able to turn up render distance, textures and AA?

Solution
It's a bit more complicated than that. More VRAM per card generally let's you run higher resolutions. The rest depends on the GPU. I've always run with AA at 4x or 8x, never really since a difference above that and a 970 should handle 8x at most resolutions without a problem. With two you can increase the other graphics options.

Keep in mind that any effects depend on the games you run and the resolution you run them at. Without that information nobody can give a useful answer.

DX12 is supposed to stack Vram in SLI setups. Sadly it will only work on DX12 enabled games. So even slightly older games like GTA V / BF4 won't be able to utilize it because they use DX11. Newer games coming out this year like battlefront will more than likely support DX12 however. it's looking like DX12 is going to be the answer to some common sli problems.
