If I upgrade my windows 8.1 to windows 10, will my files (ie, desktop + steam ect) get deleted? I would like to try it.

It probably won't kill off your existing files.
But we have to wait a couple of months to actually see what the specific upgrade options will be.

No they will not get deleted. You should reserve and not worry about anything getting deleted. It won't happen. Also if you click "Your PC is Ready" it will show you if you will have any device or hardware conflicts.
