Which Gaming Build is Better (AMD build vs. Intel Build)

I think if you're willing to combine the builds a bit, you could get a nice i5 build with 980 for the same price as the AMD build.

Yep.

The 8350 is... nice for an AM3+ CPU (I still have my FX-6200, and it holds up well enough for a GTX970), but honestly it doesn't perform all that well in gaming compared to a Haswell or later Intel CPU.

To be fair, you did most of the work, all I did was look at what parts you were willing to use and dropped in a few of my already noted parts that took the price within your range. Case type is really hard to pick for somebody, but you had already chosen a decent mid tower case for the AMD build (I like full tower, but those cost $30 more)
