How much memory do I need for this mixed role system?

I am going to combine my home server and family PC into a single PC that does the role of both.

Current hardware:
i5-4690(non-K)
MSI ECO H97 mobo
16GB DDR3-1600 CL9 (2x8GB)
GT-750 1GB videocard
12TB in storage, plus a 250GB SSD system drive.
Blu-Ray writer drive.
Will reload with Win-10 when it becomes available.

Roles:
1. Plex media server that streams 1080p videos accross my network to various devices, and will need to transcode down to 720p at times.
2. File & Print server - central storage for all user files and all printing is routed thorugh it as well.
3. Backup server - client PC's will send their system backups to this server for storage.
4. DVD/Blu-Ray riping and re-encoding - slowly moving my large DVD & Blu-Ray collection to a digital format and this PC will be the primary device that does this.
5. General family PC use, heavy on the Netflix & Youtube use.

This PC will be on 24/7 and I will do the encoding overnight when it's not in use by anyone. I also plan on running both Bitdefender & Malware Bytes paid software just to make sure the PC doesn't get infected.

Do you think 16GB is enough, or should I bump it to either 24GB or max it out at 32GB?

Yep, 16GB should suffice, if doing the video real time rather than overnight, more DRAM would speed things up (depending on the size of the videos) which could save you productivity time
