So I've started my build off with the following components...
[CASE] NZXT S340
[MoBo] Asus X99 Deluxe

[CPU] Intel Core i7-5930K LGA 2011-v3
[CPU Cooler] NZXT Kraken X61 280mm All-In-One Liquid Cooling
[RAM] Corsair Dominator Platinum 32GB (8 x 4GB) 288-Pin DDR4 2666
This is where I have stopped for now. I'm undecided on what to do for hard drives. This motherboard supports M.2 and I've looked up some info but don't know much about it. I'm thinking I would do a 500 gb M.2 drive for OS and then at least a 2 TB Raid setup for all my data?
I would also like to run (6) ASUS VN289Q 28" LED Monitors (because why not), and I'm not sure what would be the best graphics card or cards that would do this the best. I do not do any gaming. Just AutoDesk products, videos, and maybe a little photoshopping. AutoDesk recommends Nvidia Quadro cards. And it looks like I would need (3) Quadro 4200's if I decide to go that route. These cards are single slot so should fit pretty good in this case. Just looking to see what you guys think.

Your proposed system has some good choices is going in a good direction- LGA2011-3 and Quadro K4200, but may be focused a bit more specifically for workstation use.
The following system has the same performance objections and a number of similar components.
CPU: The K and X-series i7's are fantastic for high performance but overclocking is not desirable for workstation use in the interest of stability and ECC RAM is desirable. However, the CPU is a Xeon E5-1650 v3 which is the Xeon cousin to the i7-5390K. The Xeons E5-1600 series appear to have the best cost / performance of any Xeon series made and up to an 8-core system, unless the extra PCI lanes are needed from a dual CPU system, I'd always recommend the E5-1600's.
Motherboard: The choice here is an ASUS X99-E WS for seveal reasons. First, on Passmark Performance Test, the CPU score with a Xeon E5-1650 v3 on the ASUS WS is 16454 while the next highest is 14671 on AsRock X99 Extreme 4- quite a difference. The ASUS is more expensive than the ASRock but is of a very high quality, has M.2, and the ideal slot configuration- 7X x16 PCIe 3 slots which can run 3X x16 to accommodate 3 GPU's.
Cooling: I feel that in this application, liquid cooling is not necessary and actually undesirable from a noise standpoint as a large radiator places an array of fans next to the case surface.
Monitors: The Quadro K4200 is the best visualization cost /performance GPU for CUDA acclerated visualization applications- AutoDesk, Adobe, and Dessault (Solidworks) and I'm shopping for one myself. However, you might want to reconsider using 6 monitors. I experimented with three 27" and went back to dual. The good feature is that the menus and subsidiary programs can be separated to view, but with any more than three large monitors, the problem is scanning among all that surface area. I found that even with a series of complex projects I'm doing now, where I'm running AutoCad, Sketchup /Vray, WordPerfect, Photoshop, Corel Technical Designer, Google Earth, and sometimes two broswers, I never make more than one operation from the source to the target object at a time. When changing sources, I quickly select the program in the taskbar. This is by way of saying, that you might consider consolidating the costs and run a single K4200 with dual 30" DS 1.2 color corrected monitors of the highest quality or a pair of K4200's with 3X 27-28" quality.monitors of the higher quality.
