I'm looking for the best price-per-performance GPU that can handle 1440p and maintain a constant minimum 120FPS in all games at high settings. What's the best price-per-performance card I can get?

120 FPS is exactly the same as trying to drive dual 60Hz monitors.

2560x1440 = 3,686,400 @ 120Hz = 442,368,000 pixels per second

Now lets try the same thing except with a 4k monitor @ 60Hz.

3840x2160 = 8,294,400 @ 60Hz = 497,664,000 pixels per second.

Bottom line. Look for a graphics card that can do 4k @ 60Hz, and you will have found your 1440p @ 120Hz card.
