Just one of my 780s can handle most games with visuals cranked up at 5760 x 1080. One 980ti should be great for what you want. It is possible that you may need to turn down the visuals in some games but nothing that is really going to impact the look too much.
R9 295x2 is an amazing dual GPU card. Comes with a liquid cooling solution. But uses a lot more power. You will need at least 850w PSU for this, possibly 1000w, depending on your other system components.

Second choice would be the GTX 980TI Gigabyte G1 Gaming. Aslo an amazing card. Not quite as fast as the 295x2, but uses less power and runs cooler. Can be Overclocked to near TitanX performance.
