My CPU gets hot when gaming but cools instantly?

Hi guys, built my first PC the other dayday
First off, my CPU is an AMD FX8350, not over clocked on a stock cooler.
When I play any games, the temp will climb to a frightening 79 degrees celcius
As soon as I leave the game, even if I alt tab, the temp will quickly fall back to 27 degrees within minutes (numbers are from speed fan and hw monitor)
What's wrong with my PC guys? I shouldn't be scared to play my games haha

How long have you had this problem and how long have you had the CPU?

My first guess is perhaps that the thermal paste might be going,

also there's the fact that a CPU will cool faster the hotter it is relative to ambient temperatures, it might look alarming if it gets really hot, but CPUs often run close to 90C when pushed hard.
 
the cooler they come with isnt that great, grab a hyper 212 and you can even run a bit of an overclock if you would like.

how many fans are in your case?

you should be able to disable the turbo and lower the voltage to something more ideal while still having it clocked at your turbo speeds. in most cases too much voltage is actually pushed to the cpu on auto causing higher temps

when you alt-tab out the game runs in the background, thus because it doesn't have to help render all that sh*t on the screen (because you alt-tabbed to the desktop) that's why it goes down. Because your FX-8350 runs at 79 degrees Celsius I recommend getting a small $15 aftermarket cooler to lower your temps from the danger zone. (70 degrees isn't the danger zone but is awfully close)

I've had the problem since I built it a couple days. I remember getting some grease on my fingers when I took the CPU out of the box, could this be the thermal compound, and could some be missing?
(Sorry I'm a noob)

you're not supposed to touch the thermal compound that's preapplied to the stock cooler, as the grease and natural oils from your fingers will interfere with heat dissipation. When you touched it you also got some on your fingers meaning some was removed from the heatsink (they usually put just enough to get it working).

Of course, don't beat yourself up in any way. The most noob mistake ever was a story about somebody putting the intel sticker on top of their processor and putting the heatsink on it... what I would give to ask that guy what he was thinking.

If you touched the bottom of the CPU, may the gods have mercy upon your soul. (I've never actually done this, but every CPU I've ever gotten says DO NOT TOUCH THE BOTTOM OF THE CPU in big letters)

You're supposed to apply a thin layer of thermal grease to the CPU before placing the heatsink on top of it. I don't remember if my last CPU came with it pre applied or not. From what it sounds like, it seems you disrupted it slightly, impeding cooling performance.

Cooling off quickly when no load is on the cpu is normal. A decent aftermarket cooler is a good idea. I would recommend a better cooler than the Hyper 212 EVO that someone mentioned. The Hyper 212 EVO also has acrappy mounting solution. I recommend a Noctua NH-D14 or a NH-U14S. Those two coolers utilize the stock AMD retention bracket and they have a crap ton of headroom as far as heat dissipation.
