The GTX 960 is a great GPU for balancing graphics work and gaming (Quadro like with a high CUDA core count). If you wanted to sacrifice performance on the gaming side and excel on graphics work, then look toward the Quadro.

Upgrade the SSD to a Samsung 850 Pro 512GB model, and find a more expensive case if you want to use the remaining portion of your budget. It really isn't needed though...

The Xeon will have zero issues gaming. It doesn't get much better unless you want to overclock an i7-4790k. The GPU will have no bottleneck... Why do you think that?
