HDD and SSD usage on a completely new PC

I want to build a new pc and i have a number of questions about this.
1: I will be using an SSD for my OS but i want to have my old HDD for my files and games, Can i remove all of the old windows files without having to format the drive?
2: Will all my old files be there when i plug in my old HDD?
3: If my files wont be there what should i do about the situation?
I hope my questions can be answered!

Solution
1. Yes. Depending on the size of the HDD it might not matter.
2. Yes BUT none of the applications installed on the old hard disk will work. They will have to be reinstalled.
3. Backups should be part or your normal PC maint anyway. Always backup before a big change.
