Which would be better for my Z68 Asrock Extreme4?

I am currently running an i5-2500K (Clocked to 4.6 Ghz). My MB is the Asrock Extreme4 Z68.

I am currently running a dual kit 2x4 (8GB) of G.Skill Ripjaws 2000Mhz (F3-16000CL9D).

I am thinking of upgrading to 16GB (2x8 Kit)... currently considering the following:
GSkill Trident-X 16GB Kit (8Gx2) DDR3-2133 F3-2133C9D-16GTX -- $187.00
G.Skill Ripjaws-X 16GB Kit (8Gx2) DDR3-2133 F3-2133C9D-16GXH -- $182.00
G.Skill Trident X F3-2400C10D-16GTX 16GB (2x8GB) DDR3 -- $199.00

Any thoughts? As far as I am aware these can work on a Z68 chip set. I am leaning towards the Trident-X 2133Mhz.

Right, get the Trident X DDR3-2133 because the CPU is limited to the DDR3-2133 memory multiplier. Even if you OC, the max will be around DDR3-2250 depending on the quality of the particular 2500K CPU.

I would reccomend the G.Skill Trident X F3-2400C10D-16GTX 16GB (2x8GB) DDR3 because I think it will fit well with x5 power that the motherboard claims to have. The little extra power might help if you plan on using it a lot

After searching through Asrock I found this:

Z68 Extreme4 supports DDR3 2133(OC)/1866(OC)/1600/1333/1066 non-ECC, un-buffered memory and max. capacity of system memory is 32GB.

So the 2400 doesn't seem like an option unless I 'downgrade' its frequency to 2133. But may as well buy the 2133 for a cheaper price.

Before deciding, what CPU ar you running, that will be the determining factor. The MC (memory controller) is in the CPU, it has to be able to carry the data rate. A K model CPU can normally carry 2133 (may require a small OC), non-K CPUs (upper end 1866)
