How can I restore the default extensions which Word will open. Another program hijacked it and now I have to specify "Open Wit

I installed NotePro to use as an alternate to wordpad, however it automatically assigned ALL document extensions to itself, and now if I want to open a Word document in Word, I have to choose "Open With" in order to open without going through NotePro.

I recall you need to press shift and then click with secondary botton on the file, then select the program you want to use, and tic the checkbox to make it the default program for that filetype. They are other ways too to change file assosiations but this is the easiests.

If, as some programs do that, the other program actively ties the file assosiation back to itself, you need to change it not to do that from the program itself.
