Best RAM for Overclocking my Intel i7-950

So, when I first built my computer, I was incredibly happy with it. But as time has gone by, I have found two bottlenecks that I'm looking to fix, one of them in particular.

Firstly, here is my build for reference:

OS: Windows 7 Home Premium 64-bit

Motherboard: ASUS p6X58D-E

CPU: Intel i7 950 3.07GHz

CPU Cooler: Cooler Master Hyper 212 EVO

Temps: I get about 37-40C idle on my CPU, and when I put it under load, I have never had it go above 60C so far. As where before, with the stock cooler, I had similar idle temps, but load would bring it as high as 70-80C.

RAM: A mishmash of sticks that I'm looking to replace, actually a big reason for this thread, looking for a good suggestion to fit my needs is actually one of my questions. They add up to 12 gigs, but I would like a 12-16 gig high speed RAM setup.

Graphics Card(s): MSI geforce GTX 970 Gaming 4G

Hard Drive: x2 1 TB drives

Tower Case: Cooler Master HAF 932 Advanced – High Air Flow Tower

So basically, I'm looking to replace my RAM with something brand new, and to overclock my CPU.
I'm not looking for a heavy overclock, just something safe and stable to get a little more out of the part of my computer that is the current bottleneck. I would just get a new CPU, but nobody makes CPUs that fit the 1366 lga slots anymore, and I would prefer not to have to buy a whole new motherboard. So, this strikes me as the next best thing.

I have no hands-on experience with overclocking, but have done some reading, so I understand the basics (I also have come to find out that apparently, overclocking on ASUS motherboards is harder than on other boards, oh goodie). But most guides out their for overclocking my specific CPU are about pushing limits, and I'm only really interested in staying within very safe limits, but still getting a little something extra out of it.

I'm sorry for the wall of text. In short, I'm looking for a RAM set up that works for my board, that is fast, at least 12 gigs (if not 16, my OS limit), and has timings that will work with my CPU when overclocked. And also, am looking for possible help from someone who has hands-on experience with overclocking, who could maybe point me in the right direction, or maybe suggest some good levels to overclock things to that would be safe, and effective.

I have six sticks of RAM, which are all similar, but technically of two different types.

I would be incredibly grateful for any and all assistance. Sorry, I hope this doesn't come across as wanting to be spoon fed or anything, it mostly comes from my wanting to not make any decisions that I will regret, and not wanting to break anything due to my lack of actual experience.

The manual for the motherboard says that it can go up to 2,000 with overclocking. Does this mean something else?

1600 means ram speed. Your motherboard supports the following speeds
1600/1333/1066 (The higher the better)
But if you get a ramstick which has a overclocking feature then it can go up to 2000
