Most games utilize 2-3 cores, maximum. So it comes down to which processor has stronger individual cores, which is easily the Xeon. That Xeon is an excellent chip, though I might suggest the 1241 as it's 100mhz faster. If you think that's worth $20 more
 
xeon. with the 9590 you would need a more expensive motherboard, bigger psu, and watercooling. The xeon chip is much more efficient so you can get away with a lower end motherboard, smaller psu (150 less watts required.) and stock intel cooler. It will also have superior performance on average.

whats the difference between this mobo: Gigabyte GA-Z97X-UD3H-BK , to a cheaper one like you mentioned? will it affect my performance?

only SLI? not crossfire? cuz i was thinking about getting the hd 7990 CF
 
They technically "support" Xfire, but the second slot does not run in X8 nor X16 mode, meaning the second card would be bottlenecked in Xfire.
I would recommend you consider different cards however, they run very hot and loud, and are two(ish) generations old.

i dont realy have a problem with the noise and im also going to get a gpu cooler and 10 case fans so hopefully the temp wont be a problem, what mobo whould you reccomend for crossfire hd 7990 that wont bottleneck any of the cards? will the Gigabyte GA-Z97X-UD3H-BK be fine?

the gtx 980ti maybe way better but its also way more expensive, whould double r9 290x be better than double hd 7990?
