I have a server PC which is pretty powerful. The PC is running Windows Server 2012. I was wondering if I could game on the server OS.

(I don't know the exact name of the parts)
Specs: Intel Core Zeon (12 Core CPU)
128 GB of ECC RAM
Nvidia Quadro M6000

Solution
Possibly. That's not a gaming graphics card, so you may be limited there. The other issue is the OS. Games are written for consumer versions of Windows, not enterprise versions. Try it and see.

Windows server by default has a lot of features that the consumer version of Windows has turned off. You will need to turn them on before you would even have the ability to game on it.

That site seems to be dedicated to that exact task though and has tips to get games to work. Will probably be a lot more work than it is worth, especially fussing with the GPU to get it to run the games properly since it is a workstation grade GPU and sues different drivers.

Even though it is not a gaming graphics card, do you think I will be able to play games (if I get it to work) at 1080p 60 FPS?
