I'm looking to start building my own server rack at home for virtualisation and file sharing etc ... A benefit is it will help make me better at my job (and for self-development), my plan is to use enterprise level equipment and was wondering if I could get advice on these items

They will be used for repo handling (SVN git etc), building software development environments or similar, and media hub(s).

Just in terms of cost to usefulness which would be the better choice and if what I want to use them for they would perform well?

If neither are that good for my needs what should I be looking for?

A 1U server will be NOISY. The 2U server will be slightly quieter. I would recommend trying to find an HP ML350 G5 or HP Z800, Dell T7500. These are all dual socket motherboards similar to the Dell 2950 but much quieter. If you REALLY must rack mount, they have rack mounts available I believe.
