I am buying a new CPU Cooler and on the processor there is the old thermal paste. Should i remove the old thermal paste? I think I should because they send you new thermal paste for a reason or should i just save the new thermal paste for later?

yes you should...

because of manufacturing tolerances, no surface is perfectly flat. thus you use the paste to fill the gaps between the cpu and cooler.
new cooler means different gaps to fill :D
