the 4790K supports 1333 and 1600mhz ram.
the motherboard supports 1333, 1600 and 1866mhz ram.

correct me if i'm wrong, if i were to fit 1866mhz ddr3 i would need to overclock the IMC on the cpu to run the memory at that speed, yes?

with the memory controller on-chip, can i disregard the motherboard manufacturer's specs and overclock the IMC higher to run 2400 or higher memory, assuming i have enough cooling headroom?

Yes you can run higher DRAM, many 4790K will run up to around 2133 with the CPU at stock, that or higher may take a small OC of the CPU itself, on my two 4770K builds (I run 32GB on each) the Z87 runs 2666 sticks and the Z97 runs 2800 sticks (bothe in sig). Additionally running the higher data rates doesn't have any negative affects on the CPU, so you'll be fine

great stuff, thankyou. i couldn't find the QVL, but then i was browsing with my phone...
i read Ryan's post about IMC overclocking and the extra heat that produces. hopefully the cooling system i am installing will be capable of moving enough heat to allow 3200mhz RAM (100% mc OC)... but is it worth the outlay over, say, 2400? does it scale? is 3200mhz 33% faster than 2400?
i have only used up to 1600 myself and apart from enabling XMP i haven't tried any memory overclocking before.

that sounds like 'diminishing returns', way beyond my comfort zone...
i'm thinking the 2400-2800 range will be a good place to look for a decent compromise of cost/performance/heat.
talking of heat, do DIMMS get hot enough to warrant their own fans or waterblock, or is the heat spreader and good airflow enough?

Yes, and again depends on what you do, for most people 2133/2400 is good if they really use the rig (multitasking, higher end apps, large data sets, VMs, etc.....the the prices tend to up up for 2666 and up, so then it becomes individual justification if the added cost will be covered by production gains
