So im overclocking a 3 way sli config with the afor mentioned 6gb 780s, and they took a decent overclock of 192mhz core and 140mhz mem. custom waterloop. Scoring 20.7k firestrike (really regretting the quad core, but i digress) and despite everything reacting as expected benchmarking wise, gaming is another story. I can run Valley benchmark like a screensaver, but as soon as i play a game, i get a total system lockup. Infact i have to drop oc down to 90mhz core and no mem oc just to get games to play. While im not a complete noob when it comes to overclocking... I am at a loss for what the issue is. Temps are great, cpu is clocked nicely and stable. Running 2133 ram at xmp 1866 to give cpu some breathing space. Cant figure it out.

Solution
Well benchmarks are just in a way tests, whereas an actual game. Sometimes actually finds more in-stability in the cores than any benchmark.
Have you tried upping the voltage further to get the cores stable? You're custom loop should keep things nice and cool. Should be able to go up to ~1.3v or whatever you're willing to go.
Also you could be un-lucky and one of those cards is just a plain bad overclocker. Also I find valley and Heaven benchies to be quite weird with overclocks sometimes.
test your cards out in a full game of BF4 or Crysis 2-3. Post back results and also post your other overclocking settings ;)

-good luck
