Thats what I was planning on doing, yet I've been told that's not a very balanced setup for gaming.

what does that mean? both AMD R9 380 or AMD R9 390 are very fast. R9 390 is one of the fastest cards and priced very well with 8GB VRAM, which is huge.

Do you think I should get a 390 over a 380? Would it be a big performance boost?

yes, if you can afford it, go for 390, it has 8GB of VRAM where as 380 is either 2GB or 4GB. 390 is a very fast card.

I thought VRAM was only good if you want more monitors? I'm permanently on one.

depends on your monitor resolution and which game you are playing. Some games like Skyrim V and GTA V with high res pack can eat up 4 to 6GB easily
