How does RAID 5 work?

All I know so far is RAID 5 is like RAID 0 with 1 drive as backup.
And I know the minimum is 3 drives so if 2 drives are for speed and only 1 drive is a backup..
Basically I heard that the 2 drives double the speed and double the storage. So let's say I have three 1TB HDD's. If using RAID 5, I would have 2TB of storage with the third drive for backup.

So my question is how does the third 1TB HDD hold 2TB of data? Also what is a RAID controller used for? I saw people using RAID 0 without a RAID controller and just plugging into the motherboard.
Correct me if something is wrong
